We created a custom multiple choice property and we want to capture in a separate field the last selection added to that property and the date that the selection was made.
You'll have to flip that around and it'll be a lot easier:
Create a dropdown property (single select)
Use a workflow to enroll contacts where the value of that property changes (re-enroll based on "is known"), then use "Edit record" to append the value from the dropdown property to the multiple checkboxes property
Whatever is selected in the dropdown, will now be appended to the multiple checkboxes.
Without working with the API, I'm not aware of a way to do it the other way around.

It is a user on an internal record. On our Contact Object, we created a multiselect field call Campaign Tag. Our contacts can be included in multiple marketing campaigns. so anytime we make a selection under the Campaign Tag property, we want to capture which selection is the most recent and the timestamp. So I want to create two custom properties called Most Recent Campaign Tag and Most Recent Campaign Tag date/time.
@GFlo_ADB that I understood - you would have to change this process slightly so that a user updates a single select field with the last campaign - and a workflow would append it to the multiple checkboxes property. I am not aware of a way to do it the other way around natively.
